Croissant French Toast Brunch Casserole

Reduced-Guilt Croissant French Toast Brunch Casserole with berries and a Nutella drizzle. Decadent and perfect for your next brunch gathering. 


Units Scale
  1. 810 mini croissants
  2. 8 large eggs (do not have to be at room temperature)
  3. 6 tbsp melted unsalted butter (slightly cooled)
  4. 2 cups reduced fat milk (nut milks okay too)
  5. 1/2 cup heavy whipping cream
  6. 1 tbsp cinnamon
  7. 2 tsp vanilla bean paste
  8. 3/4 cup granulated sugar
  9. 1 tsp ground clove
  10. 2 tsp ginger
  11. 1 tsp sea salt
  12. 2 tsp melted butter for baking dish
  13. 1 cup fresh berries
  14. 1/2 cup Nutella
  15. Maple syrup


  1. Preheat oven to 350F
  2. Combine eggs, milk, cream, 6 tbsp melted butter (slightly cooled), sugar, vanilla, spices and salt in a large mixing bowl. Whisk together until smooth.
  3. Use a pastry brush to spread 2 tsp melted butter on bottom and sides of 9×13 baking dish
  4. Tear croissants into varying sizes and place on bottom of baking dish. Pour custard mixture over croissant pieces and push down on croissants to ensure fully in liquid. The croissant will soak up some of the liquid mixture – this is key
  5. Bake for 40-45 minutes – until croissants are golden and custard firm
  6. Microwave Nutella until drizzling consistency and drizzle over casserole. Top with fresh berries and maple syrup. 


  1. Can be prepped night before. Just put plastic wrap over casserole dish and store in fridge until ready to bake. Let sit at room temp while oven preheating
  2. Best eaten warm but will keep in fridge for 2-3 days
  3. Drizzle and toppings are optional and can be changed up as desired
